Muffin with pumpkin flour, sweetened with Stevia extract, gluten and yeast free

Recipe for 8 Muffins:

Ingredients:

  • 130g of pumpkin flour
  • 70g of coconut rapé
  • 4 eggs at room temperature (separate yolks from egg white)
  • 80g coconut oil
  • 120ml almond or coconut milk
  • 1 scoop of Steviasweet
  • 100g sugar-free dark chocolate with maltitol

Preparation:

Combine in a bowl: pumpkin flour, 4 egg yolks, coconut oil, vegetable milk.

After mixing well, add the egg whites whipped to stiff peaks, and lastly add the grated dark chocolate or small pieces.

Heats the oven to 180g.

Let it cook for 30 min and make sure it does not become too hot.

The Muffins in this recipe are ideal for those who do not want to take gluten and yeast.
