You have invited your vegan friend and you don't know what dessert to prepare? The coconut blancmange is the perfect dessert for you, in fact it is perfect for all those who want to follow an extra vegan diet and it is sugar-free, which should not be underestimated, especially for the line!  This spoonful dessert is quick to make, moreover the fact that it can be eaten cold makes it perfect even in the hot summer months. For this recipe I used Stevia Sweet

500 ml coconut milk
3 scoops Stevia Sweet
50 g dehydrated coconut
30 g corn starch
1/2 vial aroma rum

Pour the coconut milk into a saucepan, add the stevia and the rum aroma.  Place the saucepan on a lively flame and heat the mixture without reaching boiling point.

In the meantime pour the starch into a bowl, wet it with 3-4 spoonfuls of hot coconut milk and stir until you obtain a homogeneous batter.

Transfer the starch and milk mixture into the saucepan together with the remaining coconut milk and stir. Cook over low heat for about 5 minutes, until it thickens to the consistency of a thick cream.

Divide the blancmange into 4 cocotte or other cups of your choice, let it cool down, then transfer the cups to the fridge and keep them until serving.

Remove the cups from the fridge, dust the surface of your blancmange with an even layer of dehydrated coconut.
